1 sheet puff pastry, thawed
2 tablespoons butter
1 tablespoon olive oil
8 oz mushrooms, sliced (cremini or button)
1 small shallot or ½ small onion, finely diced
2 cloves garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
1 cup Gruyère cheese, shredded
1 egg, beaten (for egg wash)
Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a skillet over medium heat, melt butter with olive oil. Add mushrooms and cook until softened and lightly golden, about 6–8 minutes.

Stir in shallot, garlic, salt, pepper, and thyme. Cook 1–2 minutes more until fragrant. Remove from heat and let cool slightly.

Roll puff pastry out on a lightly floured surface into a rectangle. Transfer to prepared baking sheet.

Lightly score the center third of the pastry lengthwise (do not cut through). On both sides, cut diagonal strips about 1 inch wide.

Spoon mushroom mixture down the center section. Sprinkle Gruyère evenly over the mushrooms.
