Loaded Scalloped Potatoes

Ingredients

For the Potatoes:
2 lbs Yukon Gold or Russet potatoes, thinly sliced
1 small onion, finely diced
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups whole milk
1 cup heavy cream
2 cups shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
¼ cup sliced green onions (plus more for topping)

For the Topping:
6 slices bacon, cooked and crumbled
Additional cheddar cheese (optional)
Fresh green onions for garnish


Instructions

Step 1: Prepare the Potatoes
Wash, peel (optional), and thinly slice the potatoes about ⅛-inch thick.
Dice the onion and set aside.

Step 2: Make the Creamy Sauce
In a medium saucepan, melt the butter over medium heat.
Stir in the flour and cook for 1 minute to form a roux.
Slowly whisk in the milk and cream, stirring constantly until smooth.
Add shredded cheddar, garlic powder, salt, and pepper.
Cook for 3–4 minutes until the sauce thickens.

Step 3: Layer the Dish
Preheat oven to 350°F (175°C).
Grease a 9×13 baking dish.
Layer half the potato slices evenly in the dish.
Sprinkle with half the diced onion, half the green onions, and half the crumbled bacon.
Pour half the cheese sauce evenly over the top.

Repeat with the remaining potatoes, onions, and cheese sauce.

Step 4: Bake
Cover with foil and bake for 60 minutes.
Remove the foil and bake for an additional 20–30 minutes, until the top is golden and bubbly and potatoes are completely tender.

Step 5: Add the Toppings
Sprinkle additional shredded cheddar (optional).
Top with remaining bacon and a generous handful of fresh green onions.

Step 6: Serve
Let cool for 10 minutes before serving to allow the layers to set.
