Ingredients

For the Brownie Bites

½ cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
⅓ cup unsweetened cocoa powder
½ cup all-purpose flour
¼ tsp salt
¼ tsp baking powder

For the Hot Cocoa Center

½ cup chocolate chips (milk, dark, or semi-sweet)
2 tbsp heavy cream or milk

For the Toasted Marshmallow Topping

Mini marshmallows (4–5 per brownie bite)


Instructions

Step 1: Prepare the Brownie Batter

Preheat oven to 350°F (175°C).
Grease a mini muffin pan or line with paper liners.
Whisk melted butter and sugar until smooth.
Beat in eggs and vanilla.
Stir in cocoa powder, flour, salt, and baking powder just until combined.


Step 2: Bake the Brownie Bites

Spoon batter into the mini muffin cups, filling each ¾ full.
Bake 10–12 minutes, until centers are set but still soft.
Cool in the pan for 2 minutes.


Step 3: Make the Hot Cocoa Center

Microwave Method (Fastest)

Warm chocolate chips and cream in 15-second bursts until smooth.

Stovetop Method (Silky & Rich)

Place a small saucepan over low heat.
Add chocolate chips and cream.
Stir continuously until melted, glossy, and completely smooth—about 2–3 minutes.
Remove from heat immediately to prevent scorching.

Using the back of a spoon or the end of a wooden spoon, press a small indent into each warm brownie bite.
Spoon the melted chocolate into each indentation.


Step 4: Add & Toast the Marshmallows

Top each brownie bite with 4–5 mini marshmallows.
Return to the oven for 1–2 minutes until marshmallows puff.
For a toasted golden finish, broil 20–30 seconds, watching closely.


Step 5: Cool & Serve

Let cool slightly before removing from the pan.
Serve warm for gooey centers or room temperature for easy snacking.
