Holiday Rocky Road Squares

Rich, chunky chocolate squares filled with nuts, dried fruit, and marshmallows. This naturally sweetened, dark chocolate version is a healthier take on the classic holiday treat — still indulgent, still festive, but made with simple whole ingredients.


INGREDIENTS

2 cups dark chocolate chips
OR 12 ounces chopped dark chocolate
1 tablespoon coconut oil (optional for shine and smoother melting)
1 cup mini marshmallows (or natural marshmallows if preferred)
1/2 cup mixed nuts (almonds, pecans, walnuts), chopped
1/3 cup dried cranberries or cherries
1 teaspoon vanilla extract
Pinch of sea salt


INSTRUCTIONS

Step 1 — Prepare the Pan

Line an 8×8 inch pan with parchment paper.
Set aside.


Step 2 — Melt the Chocolate

Stovetop Method 

Place the chocolate and coconut oil into a heat-safe bowl.
Set the bowl over a pot of gently simmering water without the bowl touching the water.
Stir slowly until smooth and fully melted.
Remove from heat and stir in vanilla and sea salt.

Microwave Option 

Place chocolate and coconut oil in a microwave-safe bowl.
Heat in 20–30 second intervals, stirring between each, until smooth and melted.
Stir in vanilla and sea salt.


Step 3 — Add the Mix-Ins

Fold in marshmallows, nuts, and dried cranberries.
Stir gently so everything stays chunky and well distributed without melting the marshmallows.


Step 4 — Spread and Chill

Pour the mixture into the prepared pan.
Press down lightly to even the top without smashing the ingredients.
Refrigerate 45–60 minutes or until firm.


Step 5 — Slice Into Squares

Lift the chilled block out using the parchment.
Cut into squares with a sharp knife.
Serve chilled or at room temperature.


KITCHEN TIPS

For an even healthier version, replace marshmallows with chopped dates or soft dried figs.
Use 70–85% dark chocolate for the deepest flavor and less sugar.
Add pumpkin seeds or hemp seeds for extra crunch.
Keeps well in the fridge up to two weeks.
