For the Salad:
4 cups mixed greens (spring mix or arugula works well)
1 cup roasted butternut squash, cubed
1 cup cooked sliced beets (roasted or pickled)
1 avocado, sliced
½ cup pecans or walnuts
¼ cup pomegranate seeds
¼ cup sliced red onion
¼ cup crumbled feta cheese
Orange segments (optional but delicious)
For the Dressing:
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey or maple syrup
1 teaspoon Dijon mustard
Salt and black pepper, to taste
Instructions
Step 1: Prepare the Vegetables
Roast the butternut squash at 400°F (200°C) for 20–25 minutes or until golden and tender.
Slice the cooked beets and red onions.
Cut the avocado just before assembling to keep it fresh.
Step 2: Make the Dressing
In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth.
Step 3: Assemble the Salad
Place the mixed greens on a large plate or in a serving bowl.
Top with roasted squash, sliced beets, avocado, pecans, pomegranate seeds, and red onion.
Sprinkle feta cheese over the top.
