Easter Bunny Cake


When my Mother was young, since her birthday nearly always fell on Easter, this was the cake she asked for from my Grandmother.  Creamy, fluffy, and irresistibly cute — this Easter Bunny Cake is a classic holiday centerpiece made from two simple round cakes and decorated with candy details. It’s easy to assemble, fun to decorate, and perfect for spring celebrations with kids or adults alike.

Prep Time

Ingredients

  • 2 round cakes (8 or 9 inch), baked and completely cooled

  • Buttercream frosting (white works best)

  • 2–3 long black Twizzlers

  • 2 black jellybeans

  • 3–4 pink jellybeans

  • Large coconut flakes (optional, for texture)

Tools

  • Large serving tray or baking sheet

  • Parchment paper

  • Scissors

  • Piping bag or piping gun

Instructions

  1. If the cakes have domed while baking, trim the tops flat so they stack evenly.

  2. Place one whole round cake on a large cutting board or baking sheet. This will form the bunny’s head.

  3. To create the cutting guide, trace a cake pan onto parchment or paper and cut out the circle. Fold the circle in half, then in half again to find the center point.

  4. Place the cake pan about 1 inch from the center fold and trace a line. Fold the paper back in half and cut along the line. This creates the ear and bow-tie shapes.

  5. Place the bow-tie cutout at the center of the second cake and cut along both sides. Trim slightly if needed to improve the shape.

  6. Trim the pointed ends of the ear pieces so they fit snugly against the bunny head.

  7. Assemble the bunny on your serving tray by placing the head in the center and positioning the ear pieces at the top.

  8. Frost the entire bunny with buttercream, covering the top and sides evenly.

  9. Cut the Twizzlers into short strips for whiskers. Cut the black jellybeans in half for the eyes. Slice the pink jellybeans for the nose and bow-tie buttons.

  10. If desired, pipe frosting details such as cheeks or extra texture on the face.

  11. Place the eyes and nose onto the bunny. Sprinkle coconut flakes over the cake if using, then add the whiskers.

  12. Finish by placing the pink jellybean buttons on the bow tie and adding any final frosting touches.

Serving

Chill briefly before serving to help the frosting set. Slice gently starting from the bottom of the bunny head upward.

Kitchen Tips

• Use parchment strips under the cake edges to keep the serving tray clean while frosting
• Coconut flakes add a fluffy “fur” look but are optional
• Don’t over-handle candy decorations — place them gently so they don’t sink
• Every bunny will look a little different, and that’s part of the charm
