Dried Cranberry Pistachio Energy Bark
A festive, naturally sweet dark chocolate bark loaded with dried cranberries, crunchy pistachios, and a glossy finish. This quick holiday treat comes together easily and makes a beautiful edible gift or energizing snack.
INGREDIENTS
2 cups dark chocolate chips or chopped dark chocolate
1 tablespoon coconut oil (optional for shine)
1/2 cup shelled pistachios
1/3 cup dried cranberries
Pinch of sea salt
INSTRUCTIONS
Step 1 — Prepare the Pan
Line a baking sheet with parchment paper and set aside.
Step 2 — Melt the Chocolate
Stovetop Method
Place chocolate and coconut oil into a heat-safe bowl.
Set the bowl over a small pot of gently simmering water, making sure the bowl does not touch the water.
Stir slowly until the chocolate is fully melted and glossy.
Microwave Option
Place chocolate and coconut oil in a microwave-safe bowl.
Heat in 20–30 second intervals, stirring between each, until smooth and melted.
Do not overheat or chocolate may seize.
Step 3 — Spread the Bark
Pour the melted chocolate onto the parchment-lined sheet.
Spread into an even layer about 1/4 inch thick.
Step 4 — Add Pistachios and Cranberries
Sprinkle pistachios and dried cranberries evenly over the warm chocolate.
Press them in slightly so they set firmly.
Add a small pinch of sea salt.
Step 5 — Chill
Refrigerate for 20–30 minutes or until firm enough to break into pieces.
Step 6 — Break Into Pieces
Lift the bark from the pan and break into rustic shards.
Store chilled until ready to serve.
