Yield
Makes 18–22 cookies

Ingredients

1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 tsp espresso powder
1 tsp baking powder
¼ tsp salt
1 cup granulated sugar
¼ cup vegetable oil
2 large eggs
1 tsp vanilla extract
½ cup chocolate chips (optional but amazing!)
½ cup powdered sugar (for rolling)

Instructions

Step 1: Prepare the Dry Ingredients

In a mixing bowl, whisk together the flour, cocoa powder, espresso powder, baking powder, and salt until fully combined.

Step 2: Mix the Wet Ingredients

In a separate bowl, beat the sugar, vegetable oil, eggs, and vanilla extract until smooth, glossy, and well blended.

Step 3: Form the Dough

Add the dry ingredients into the wet mixture and stir until a thick cookie dough forms.
Fold in chocolate chips if using.
Cover the bowl and refrigerate the dough for at least 1 hour — chilling is essential for creating the signature crinkle pattern.

Step 4: Shape and Coat

Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Scoop chilled dough into small balls and roll each one generously in powdered sugar until fully coated.

Step 5: Bake

Place dough balls on the prepared baking sheet and bake for 10–12 minutes, or until the cookies are cracked on top and set around the edges.
The centers will remain soft and fudgy — perfect!

Step 6: Cool and Serve

Allow cookies to cool slightly on the baking sheet before transferring to a rack.
Serve warm with a holiday coffee, hot chocolate, or your favorite cozy drink.

Kitchen Tips

• Add extra espresso powder for a bolder mocha flavor.
• Chill the dough overnight for deeper cracks and maximum fudginess.
• Swap chocolate chips for peppermint chips for a festive seasonal twist.
