Crispy Smashed Baked Potatoes

Crispy on the outside, tender on the inside, and finished with melted white cheddar and fresh parsley — these smashed red potatoes are a simple, satisfying side dish that works for weeknight dinners or cozy gatherings alike.

Ingredients
1.5 pounds small red potatoes, scrubbed
3 tablespoons unsalted butter, melted
½ cup grated white cheddar cheese
2 tablespoons fresh parsley, chopped
Salt and pepper to taste


Instructions

Place the potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15 minutes. Drain well and allow them to cool slightly.

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper. Arrange the potatoes on the baking sheet and gently smash each one using the bottom of a glass or a potato masher until flattened and slightly cracked.

Brush the smashed potatoes with melted butter and season generously with salt and pepper.

Sprinkle the grated white cheddar evenly over the potatoes. Bake until golden and crispy, about 20–25 minutes.

Remove from the oven and garnish with freshly chopped parsley. Serve immediately.
