Spinach & Artichoke Dip
1 tablespoon olive oil or butter
2 cloves garlic, minced
1 cup cooked spinach, very well drained and chopped
1 cup canned artichoke hearts, drained and chopped
8 oz cream cheese, softened
½ cup sour cream
½ cup mayonnaise
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon crushed red pepper flakes (optional)
Instructions
Make the Dip
In a small skillet over medium heat, warm olive oil or butter. Add garlic and cook briefly until fragrant. Remove from heat.
In a medium bowl, combine cream cheese, sour cream, and mayonnaise until smooth.
Stir in spinach, artichokes, sautéed garlic, mozzarella, Parmesan, salt, pepper, and red pepper flakes if using. Mix until evenly combined.
Bake
Preheat oven to 375°F (175°C). Lightly grease a small baking dish.
Spread the mixture evenly into the prepared baking dish.
Bake uncovered for 25–30 minutes, until hot, bubbling, and lightly golden on top. Let rest for 5 minutes before serving.
Baking Notes
• Spinach must be very well drained to prevent excess moisture
• Freshly grated cheese melts more smoothly
• Dip should be bubbly but not browned
• Resting briefly helps the dip thicken for scooping
