Cranberry Apple Cheesecake Bars

Creamy cheesecake layered over a buttery crust and topped with a sweet-tart cranberry apple crumble. A perfect festive dessert!

Ingredients
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup sugar
6 tablespoons melted butter
For the Cheesecake Filling:
16 oz cream cheese, softened
½ cup sugar
2 large eggs
1 teaspoon vanilla extract
¼ cup sour cream
For the Cranberry Apple Topping:
1 cup cranberries
1 cup diced apples
⅓ cup sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
½ cup oat or flour crumble (optional extra on top)
Instructions
Make the Crust:
Preheat oven to 350°F (175°C).
Combine crumbs, sugar, and melted butter.
Press into a parchment-lined baking dish.
Bake for 8 minutes.
Make the Cheesecake Filling:
Beat cream cheese and sugar until smooth.
Add eggs one at a time, then vanilla and sour cream.
Pour over the crust.
Make the Cranberry Apple Topping:
Mix cranberries, apples, sugar, lemon juice, and cornstarch.
Spoon evenly over cheesecake layer.
Sprinkle crumble topping if using.
Bake:
Bake 35–40 minutes until set.
Cool completely and chill 3 hours before slicing.
