Christmas Rice Pudding with Spiced Fruit

Creamy, slow-simmered rice pudding is one of those timeless comfort foods that feels like a hug in a bowl. This version is gently sweet, rich without being heavy, and finished with warm holiday spices and spoonfuls of jewel-toned fruit. Creamy Rice Pudding
Ingredients
¾ cup short-grain rice (Arborio or pudding rice works best)
2½ cups whole milk
½ cup heavy cream
⅓ cup sugar (or to taste)
¼ tsp salt
1 cinnamon stick
1 star anise (optional, but lovely for holiday flavor)
1 tsp vanilla extract
Instructions
Rinse the rice briefly under cold water.
In a medium saucepan, combine rice, milk, cream, sugar, salt, cinnamon stick, and star anise.
Bring to a gentle simmer over medium-low heat, stirring often.
Reduce heat to low and cook uncovered for 30–40 minutes, stirring frequently, until the rice is tender and the pudding is thick and creamy.
Remove from heat and stir in vanilla.
Remove and discard cinnamon stick and star anise.
Spiced Fruit Topping
Ingredients
½ cup cranberry sauce or stewed cranberries
¼ cup golden raisins
¼ tsp cinnamon
Pinch of nutmeg
Optional: orange zest or splash of orange juice
Instructions
Warm cranberry sauce with raisins, cinnamon, and nutmeg in a small saucepan.
Cook gently for 3–5 minutes until the raisins plump and the mixture becomes glossy.
Set aside to cool slightly.
To Serve
Spoon warm rice pudding into bowls.
Top with spiced fruit, a sprinkle of cinnamon, and a few extra raisins.
Optional garnish: cinnamon sticks, star anise, or a dollop of fresh whipped cream.

Short-grain rice creates the creamiest texture, but medium-grain works in a pinch. Stirring often is key to preventing sticking and achieving that silky consistency. The pudding will thicken more as it cools — add a splash of warm milk when reheating if needed. This keeps beautifully in the refrigerator for up to 3 days.
