Chocolate Turtle Brookie Squares

A decadent, layered dessert with a fudgy brownie bottom, a gooey chocolate chip cookie top, and a rich drizzle of homemade caramel with crunchy pecans. Turtle perfection in every bite!

Ingredients

For the Brownie Layer:

½ cup melted butter
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
⅓ cup cocoa powder
½ cup all-purpose flour
¼ teaspoon salt

For the Cookie Layer:

½ cup softened butter
½ cup brown sugar
⅓ cup white sugar
1 large egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 cup chocolate chips

For the Homemade Caramel Sauce:

½ cup granulated sugar
2 tablespoons water
3 tablespoons unsalted butter, room temperature
¼ cup heavy cream, slightly warmed
Pinch of salt (optional)

For the Turtle Topping:

½ cup pecan pieces
½ cup homemade caramel sauce (from above)


Instructions

Make the Brownie Base:

Preheat oven to 350°F (175°C).
Grease or line an 8×8 baking dish with parchment.
Mix melted butter, sugar, eggs, and vanilla until smooth.
Stir in cocoa powder, flour, and salt.
Spread brownie batter evenly into the pan.

Make the Cookie Layer:

In a separate bowl, cream butter and both sugars until fluffy.
Beat in egg and vanilla.
Mix in flour, baking soda, and salt.
Fold in chocolate chips.
Gently spread cookie dough over the brownie batter.

Bake:

Bake 28–32 minutes, until golden on top and set in the center.
Cool for at least 15 minutes before topping.


Make the Homemade Caramel Sauce:

Add sugar and water to a small saucepan over medium heat.
Do not stir — let the sugar dissolve and begin to turn amber.
Once deep golden, turn heat to low and whisk in butter until smooth.
Slowly pour in warm heavy cream (it will bubble), whisking constantly.
Simmer 1 minute until thickened.
Add a pinch of salt if desired.
Let cool slightly before drizzling.


Finish the Turtle Topping:

Drizzle caramel sauce generously over the cooled brookie.
Sprinkle with pecan pieces.
Slice into squares and serve warm or at room temperature.
