Caramel Apple Oatmeal Cookies

Soft, chewy oatmeal cookies loaded with apple pieces and drizzled with warm caramel.

Ingredients

For the Cookies:

1 ½ cups rolled oats
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
½ cup butter, softened
½ cup brown sugar
¼ cup white sugar
1 large egg
1 teaspoon vanilla
1 cup finely diced apples

For the Caramel Drizzle:

½ cup store-bought caramel sauce (or homemade)


Instructions

Make the Dough:

Preheat oven to 350°F (175°C).
Whisk oats, flour, baking soda, cinnamon, and salt.
Cream butter and sugars until fluffy.
Add egg and vanilla.
Mix in dry ingredients, then fold in apples.

Bake:

Scoop onto a lined baking sheet.
Bake 10–12 minutes until edges are golden.
Cool and drizzle with warm caramel.
