BBQ Pork & Roasted Potatoes

Ingredients
BBQ Pork
2 lb pork ribs, pork shoulder steaks, or thick pork chops
1 tsp salt
½ tsp black pepper
1 tsp smoked paprika
½ tsp garlic powder
1 cup barbecue sauce (your favorite)
Roasted Potatoes
1½ lb baby potatoes, halved
2 tbsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp dried thyme or rosemary
Optional garnish: fresh parsley or thyme
Instructions
Roast the Potatoes
Preheat oven to 425°F (220°C).
Toss potatoes with olive oil, salt, pepper, and herbs.
Spread in a single layer on a baking sheet.
Roast for 35–40 minutes, flipping once, until golden and crispy.
Cook the Pork
Lower oven temperature to 375°F (190°C).
Season pork with salt, pepper, smoked paprika, and garlic powder.
Place pork in a baking dish and cover tightly with foil.
Bake for 1½–2 hours (depending on cut) until very tender.
Remove foil, brush generously with barbecue sauce, and return to oven uncovered.
Bake another 20–25 minutes, brushing once more, until sticky and caramelized.
Serve
Let pork rest 5–10 minutes, then serve alongside roasted potatoes. Spoon extra sauce over everything if desired.
