BBQ Chicken & Potato Casserole

Ingredients
For the Casserole:
3 cups cooked diced or sliced potatoes
2 cups cooked shredded chicken
1 ½ cups shredded cheddar cheese
¾ cup BBQ sauce (your favorite brand)
½ cup sour cream
1 small red onion, finely diced
1 tsp garlic powder
Salt & pepper, to taste
Fresh parsley or green onion, for garnish
Instructions
Prepare the Casserole Base:
Preheat oven to 375°F (190°C).
Grease a 9×9 baking dish or similar casserole dish.
In a large bowl, mix together shredded chicken, BBQ sauce, sour cream, diced onion, garlic powder, salt, and pepper until creamy and well coated.
Fold in the cooked potatoes, gently stirring to cover each piece in the sauce.
Assemble & Bake:
Pour the mixture into the prepared baking dish and spread evenly.
Top generously with shredded cheddar cheese.
Bake 20–25 minutes, or until bubbling around the edges and the cheese is melted and golden.
Remove from the oven and garnish with chopped parsley or green onion for freshness.
