Yield

4–6 servings

Ingredients

1 round of brie cheese (8–10 oz), rind on
1 crusty round bread loaf (sourdough or boule works best)
3 tablespoons butter, melted
2 cloves garlic, finely minced
1 tablespoon fresh thyme or rosemary, finely chopped
¼ teaspoon salt
¼ teaspoon cracked black pepper
Optional: drizzle of honey or fig jam for serving

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Using a sharp knife, cut the bread loaf in a crisscross pattern, slicing almost all the way through but keeping the base intact.

  3. Gently widen the cuts with your fingers.

  4. Cut the brie into small wedges and tuck them evenly into the bread cuts.

  5. In a small bowl, mix melted butter, garlic, herbs, salt, and pepper.

  6. Spoon or brush the butter mixture generously over the loaf, letting it drip into the cracks.

  7. Wrap the loaf loosely in foil and place on a baking sheet.

  8. Bake for 15 minutes, then uncover and bake another 10–15 minutes until the bread is golden and the brie is melted and gooey.

  9. Serve warm, pulling apart pieces as you go. Add a light drizzle of honey if desired.

Kitchen Tips

• Keep the rind on the brie — it helps hold the cheese together as it melts.
• For extra richness, add a pinch of crushed red pepper or a sprinkle of grated parmesan before baking.
• Best served immediately while the cheese is hot and stretchy.
• Leftovers can be reheated gently in foil at 325°F.
